Burfi

Ingredients

  • 4 cups (400g) desiccated coconut
  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) melted butter
  • 1 large tin evaporated milk
  • 4 cups (900ml) water    
  • crystallized fruit (optional)

                                          

Method

  • Mix the coconut with the evaporated milk.
  • Boil the sugar and water until it thickens, then lower the heat and add the coconut and milk mixture.
  • Add the butter very slowly, stirring all the time.
  • Allow the mixture to thicken in the pan.
  • Spread the mixture onto a greased baking tray.
  • Wait for a few minutes then mark the mixture into squares.
  • Decorate with crystallized fruit.
  • Leave the burfi to cool completely before you remove it from the tray.

Burfi is an Indian sweetmeat eaten at special events.
