Ingredients
- 4 cups (400g) desiccated coconut
- 1 cup (200g) granulated sugar
- 1/4 cup (50g) melted butter
- 1 large tin evaporated milk
- 4 cups (900ml) water
- crystallized fruit (optional)

Method
- Mix the coconut with the evaporated milk.
- Boil the sugar and water until it thickens, then lower the heat and add the coconut and milk mixture.
- Add the butter very slowly, stirring all the time.
- Allow the mixture to thicken in the pan.
- Spread the mixture onto a greased baking tray.
- Wait for a few minutes then mark the mixture into squares.
- Decorate with crystallized fruit.
- Leave the burfi to cool completely before you remove it from the tray.
